Makes about 12–14 truffles

  • 1 cup soft Medjool dates, pitted (or sub 1/4 cup good-quality honey)

  • 1/4 cup softened butter

  • 1/2 cup coconut flour

  • 1/3 cup collagen peptides (unflavored is best here)

  • 1/4 cup unsweetened cocoa powder (Find my fave here)

  • 1 tbsp ground flaxseed (optional, but we love her for the fiber)

  • 1 tsp vanilla extract

  • Pinch of sea salt

  • 1–2 tbsp milk of choice (just enough to bring it together—almond, oat, or dairy all work)

Prep your dates

If using dates, soak them in warm water for about 5–10 minutes to soften, then drain well. (Skip this if you’re using honey.)

Blend it up

In a food processor, combine your dates or honey, butter, vanilla, and sea salt. Blend until mostly smooth and creamy.

Add the dry team

Toss in the coconut flour, cocoa powder, collagen, and flaxseed if using. Blend again until it forms a thick dough. If it feels too dry or crumbly, add a splash of milk until it comes together like a soft cookie dough.

Roll with it
