If you're going to make burgers, make the burger. The kind that makes everyone pause mid-bite. These juicy, cheese-stuffed grass-fed beauties are a little extra—in the best way. We’re talking smoky seasoning, a molten center of melty cheddar or gouda, and a bun of your choice (I’m partial to a homemade ciabatta, but you do you). Whether you’re hosting a casual cookout or just leveling up a weeknight dinner, this is the kind of burger that sets the bar high—and then melts it with cheese.
🌿 Ingredients (Serves 4):
For the Patties:
1.5 lbs grass-fed ground beef (80/20 for juiciness)
1 tsp smoked paprika
½ tsp ground mustard
½ tsp garlic powder
¼ tsp ground coriander (unexpected and SO good)
1 tsp sea salt
½ tsp cracked black pepper
2 tsp Worcestershire sauce
Optional: 1 tsp finely minced shallots or red onion
For the Cheese Stuffing:
4 oz aged white cheddar, gruyère, or smoked gouda, cubed or shredded
To Serve:
Buns of choice (brioche, pretzel, potato, or homemade ciabatta if you’re feeling extra)
Butter or garlic mayo
Dill pickles or bread & butter pickles
Crispy lettuce
Tomato slices (optional)
Caramelized onions or quick pickled red onions
Optional: A swipe of grainy mustard or chipotle aioli
🔥 Instructions:
1. Make the Patties
In a large bowl, mix the beef with spices, Worcestershire, and optional shallots until just combined. Don’t overmix—this keeps the burgers tender.
2. Stuff with Cheese
Divide the meat into 8 equal balls. Flatten each into a thin patty.
Place a small cube or spoonful of cheese in the center of 4 patties. Top with remaining patties, sealing the edges well so the cheese doesn’t escape during cooking.
3. Chill Time
Place patties on a plate and chill for 15–30 minutes. This helps them hold their shape and keeps the cheese tucked in.
4. Cook
Grill or pan-sear over medium-high heat, 4–5 minutes per side. Resist the urge to press them down—they need all that juicy glory.
