Camembert Grilled Cheese with Caramelized Onions

The Camembert melts like a dream—creamy, earthy, a little dramatic. The caramelized onions bring slow, sweet depth. And if you’re feeling extra (you should be), a drizzle of honey or fig jam takes it into full-on book club goddess territory.

🧅 Ingredients:
Serves 2
4 slices sourdough or rustic bread
6 oz Camembert cheese
1 large yellow onion, thinly sliced
1 tbsp butter, plus more for the bread
1 tsp olive oil
Pinch of salt, pepper, and fresh thyme (optional)
Optional: fig jam or a drizzle of honey inside the sandwich
🔥 Directions:
1. Saute those onions.
Melt butter and olive oil in a skillet over medium-low heat. Add sliced onions, a pinch of salt, and a little patience. Stir every so often until they’re golden, soft, and a little sticky—about 25–30 minutes. Add thyme if you're feeling herbal.
2. Assemble the sandwich.
Butter the outsides of your bread. On the inside, layer Camembert, caramelized onions, and a whisper of fig jam or honey (if using). Top with the second slice, buttered side out.
3. Grill to golden perfection.
In a pan over medium heat, cook each sandwich until crispy and golden on both sides and the cheese is gooey (about 3–4 minutes per side). Low and slow is key here.
4. Slice and serve
Cut diagonally, because we’re classy.
