Rustic Apple Galette

There’s something magical about a rustic apple galette — it’s like the laid-back cousin of apple pie. No need for pie pans, no fussy lattice work, just golden buttery crust folded over juicy cinnamon-spiced apples. Sweetened naturally with honey or maple syrup, this dessert feels both wholesome and indulgent. It’s the kind of bake that makes your kitchen smell like fall, even if it’s the middle of summer. For the Crust

  • 1½ cups all-purpose flour (or spelt flour, for a nutty flavor)

  • ½ teaspoon salt

  • 2 tablespoons unrefined cane sugar, coconut sugar, or honey/maple syrup

  • 1½ sticks (12 tablespoons) very cold unsalted butter, cut into ½-inch pieces

  • ¼ cup very cold water

For the Filling

  • 1¾ lbs baking apples (about 3 large), peeled, cored, and thinly sliced

  • ⅓ cup honey or maple syrup (adjust sweetness to taste)

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • 2 tablespoons unsalted butter, melted

  • 2 teaspoons corn starch

  • ⅛ teaspoon salt

For Assembling & Baking

  • 1 tablespoon all-purpose flour (or spelt flour) for dusting

  • 1 egg, beaten (for egg wash)

  • 2 tablespoons turbinado sugar (or coconut sugar) for sprinkling


👩‍🍳 How To Make IT

1. Make the crust

Line a baking sheet with parchment paper. In a food processor (or bowl), combine flour, salt, and sugar. Cut in the cold butter until the mixture resembles pea-sized crumbs. Sprinkle in cold water and mix just until dough comes together. Form into a disk, wrap, and refrigerate for at least 30 minutes.

2. Prepare the filling

In a large bowl, toss apple slices with honey or maple syrup, vanilla, cinnamon, melted butter, cornstarch, and salt. Set aside.

3. Assemble the galette

Roll the dough into a rustic circle (about 12 inches) on a floured surface. Transfer to the prepared baking sheet. Arrange the apple slices in the center, leaving a 2-inch border. Fold edges of the dough up over the apples. Brush crust with beaten egg (you can add milk or water to your egg wash for a lighter golden brown crust) and sprinkle with turbinado sugar. Chill for 10 minutes before baking. Tip: brush some egg wash on the base of the crust before adding your filling to prevent a soggy crust!

4. Bake

Preheat oven to 350°F (175°C). Bake for 55–65 minutes, until the apples are tender and the crust is golden brown. Let cool slightly before slicing.

5. Serve

Serve warm or at room temperature, plain or with a scoop of vanilla ice cream, yogurt or whipped cream.
